Alfalfa sprouts are available year round and are easy to grow. Alfalfa sprouts are the shoots of the alfalfa plant, harvested before they become the full-grown plant. Because they are so small, the sprouts contain a concentrated amount of certain vitamins and minerals such as calcium, vitamin K and vitamin C. Alfalfa sprouts contain just 8 calories and 0 grams of fat per cup. Homegrown Alfalfa Sprouts are something quite different than the usual fare. Their flavor is mild at most, but their texture is great when harvested fresh from your sprouter. Crunchy and mild. Great in sandwiches, salads, or as a salad by itself!
